Kobe Beef

Kobe beef is so named because it originated from the area of Japan around the city of Kobe. The cattle there, of the Wagyu breed, are raised according to a breeding tradition that includes a special diet and gentle handling. The result is meat known for its spectacular tenderness and juiciness and an especially rich flavor. Now U.S.-raised Kobe beef is available, although in short supply. One reason for its extraordinary flavor and texture is its degree of marbling. Kobe beef has more marbling (unsaturated fat distributed throughout the meat) than any other breed of beef.
