a standards-compliant facility
Our facility in Alsip, Illinois is USDA-inspected (Est No. 21695). We meet the Hazard Analysis and Critical Control Points, or HACCP and in accordance with FSIS Meat and Poultry regulations. We conduct pest control performance bi-weekly with Steritech. And we also follow USFDA Sanitation Standard Operational Procedures.

We carry a wide range of USDA beef grades, pork, poultry, lamb, veal, seafood, sausages, deli products, and wild game. We also have our own dry aging facility that allows us to age large cuts of beef from several weeks to several months before being trimmed and cut into steaks. This process helps the steak develop more flavor and makes it far more tender than it would be completely fresh.
